Sweet and Sour Tuna Wraps
Ingredients: 30ml (2 Tbsp) olive oil 1 small onion, finely chopped 5 PEPPADEW Peppers, coarsely chopped 2 x 170g cans solid tuna, drained and flaked 4 (60g) gherkins, sliced 15ml (1 Tbsp) fresh mixed herbs, chopped or 5 ml (1 tsp) dried herbs 8ml (1 1/2 tsp) grated lemon rind, optional 80ml (1/3 cup) Spur Salad and French Fry Dressing 500ml 80ml (1/3 cup) Sweet Chilli Sauce 125ml (1/2 cup) grated Cheddar cheese 5ml (1 tsp) Spur Seasoning Salt Add freshly ground black pepper to taste 8 flour torilla wraps
Instructions: Heat oil in a heavy-based saucepan. Saute the onion for a few minutes until soft. Add PEPPADEW Peppers, heat lightly and remove from heat. Leave to cool for a few minutes. Add the remaining ingredients and mix all together. Heat wraps lightly in microwave or oven if preferred. Spoon filling onto tortilla wraps and roll up to close. After rolling the wraps, insert skewers and cut into sections. Serve immediately. Variations Substitute the tuna with canned salmon or smoked chicken.
