Rich, chocolatey and still moist on day three, if it lasts that long. Ina Paarman's Chocolate Cake Mix is a flop-proof bake that gives great results whether you're an experienced baker or a beginner.

What it makes

• 1 x 20cm layer cake (two 20cm tins) or 18 cupcakes
• Chocolate icing not included

You'll also need

• 3 extra-large eggs
• 1 cup (250ml) canola or sunflower oil
• 1 cup (250ml) hot water, or hot water with 2 tsp coffee granules for a richer flavour

Bake for 30–35 minutes at 180°C (cupcakes 15–20 minutes at 190°C). Full instructions are on the box.
