Oxtail Potjie

Ingredients:

  • 1.5kg oxtail
  • 1 large onion
  • 4 carrots
  • 4 potatoes
  • 2 cans of guinness or red wine
  • 1 sachet brown onion soup
  • 2 bay leaves
  • Mixes herbs
  • 4 cloves of garlic
  • Salt and pepper to taste
  • Olive oil

Method:

  1. Heat olive oil in potjie pot
  2. Coat the oxtail pieces in flour and brown in the pot
  3. Add onions, garlic, carrots and potatoes to oxtail in pot
  4. Cover meat with Guinness or red wine
  5. Add bay leaves, mixed herbs, ground pepper and salt to taste
  6. Cover pot and cook for 3 to 4 hours
  7. Add mushrooms an hour before serving
  8. Add brown onion soup to thicken if needed
