Granny's Baked Milktart

Makes 2

3 cups milk
1 cup Cake flour
1 tsp Baking powder
125g margarine
4 eggs, separated
1 tsp Vanilla essence
1 cup sugar
Pinch salt

Beat egg whites till stiff  and set aside. Cream marg, sugar and add egg yolks. Add dry ingredients and mix alternately with milk slowly to avoid lumps. Add vanilla essence. Fold the egg whites into the mixture. Pour into two greased 8” pie plates, sprinkle top with nutmeg. Bake at 180 for 30 minutes and then at 120 for 15 minutes. Depending on your oven you may have to extend cooking time. Remove from oven when the centre has a very gentle jiggle. If the top starts browning too quickly, cover with a piece of foil. Allow to cool and refrigerate.
