560g Cake flour
30ml Baking powder
250g Butter, softened
2.5ml Salt
3 large Eggs, beaten
200ml Buttermilk

Preheat oven to 180C. Sift the flour and Baking Powder along with the salt into a mixing bowl. Rub the butter in until it resembles crumb. Using a round bladed knife, cut the beaten egg and buttermilk in until almost combined. Using your hands, gently combine the mixture until you have a soft dough ball. Gently pat onto a floured surface and using a cookie cutter, cut rounds out. Place on a lightly greased baking sheet and bake for 10-15 minutes until light golden brown. Serve with cheese and preserves or with cream and jam. The choice is yours!
