Ingredients:
1 Egg
2 cups Cake flour
15g Butter
1 tsp Baking Powder
1 cup boiling water
1 cup chopped dates
2 tsp Bi-carbonate of Soda
1 cup Sugar
1 tsp Vanilla Essence
Directions:
Preheat oven to 180C. Grease and line an ovenproof loaf tin. Por boiling water and bi-carbonate of soda over the chopped dates and set aside. Cream the butter and sugar. Add the egg and beat well until combined. Mix in the dry ingredients, add the vanilla essence and date mixture and blend well Pour into the prepared tin and bake for 45 - 50 minutes or until a skewer comes out clean.
