Oxtail Potjie
Oxtail Potjie
Ingredients:
- 1.5kg oxtail
- 1 large onion
- 4 carrots
- 4 potatoes
- 2 cans of guinness or red wine
- 1 sachet brown onion soup
- 2 bay leaves
- Mixes herbs
- 4 cloves of garlic
- Salt and pepper to taste
- Olive oil
Method:
- Heat olive oil in potjie pot
- Coat the oxtail pieces in flour and brown in the pot
- Add onions, garlic, carrots and potatoes to oxtail in pot
- Cover meat with Guinness or red wine
- Add bay leaves, mixed herbs, ground pepper and salt to taste
- Cover pot and cook for 3 to 4 hours
- Add mushrooms an hour before serving
- Add brown onion soup to thicken if needed
